Lamb

We harvest and sell our 100% grass fed, slow grown, pure Dorset and North Country Cheviot lamb in the fall.   We harvest young, finished lambs directly off pasture.  We think you will find our lamb to be as tasty as it gets, and absolutely tender.  These lambs are harvested at approximately 6 - 9 months of age.  We sell whole carcass lambs only.  Please see the lamb order form below.  One fully butchered lamb takes up about one and a half shelves in an average upright freezer.  The meat is processed, freezer packed and quickly frozen.

Cost

All our prices are on a per lb. basis.  Because nature is not uniform and animals vary in size, so do our lambs.  Therefore, we can't give you an exact weight for each product, only an approximation.  Most lamb carcass weights will average between 50 - 65lbs.  All orders based on carcass weights will be charged according to the hot weight of the carcass (or hanging weight).  Lamb carcass price is $5.50 per lb (therefore a 55lb. lamb would costs $302.50).

Mutton

We occasionally have mutton available; carcasses will weigh more than lambs.  Please let us know if you are interested in mutton and we will put you on the waiting list - it's a flavorsome meat, perfect for slow roasting, curry or moussaka, Lancashire hotpot and any number of Hugh Fearnley Whittingstall recipes!  Contrary to popular belief, with slow cooking we have never found it to be tough.
