Beef

We sell our 100% grass fed and finished, slow grown, Angus beef in the late fall.   We harvest fat, finished animals directly off pasture.  The beef are harvested at approximately 20 months of age.  Whole, half and quarter carcass' are available.  The meat is processed, freezer packed and quickly frozen.  All animals will be hung and processed at Ferndale Meat Company where they will be dry aged for 3 weeks.  
You can purchase our beef by the quarter, half, or whole animal.  We encourage our customers to find friends and family with whom to share a whole beef. We can also work to try to pair you up with other customers who are interested in splitting a quarter, half or whole animal. 

Buying by the Carcass

When you buy a whole or half carcass you get to choose your meat cuts.  It is a special order based on your preferences.  This is also the most economical way to purchase meat.  Carcass hanging weight is the weight of the carcass before processing (cutting up) the animal.  You will need a stand alone freezer to store this large quantity of meat.  Frozen meat will keep at a very high quality for up to 12 months, after which quality will begin to slowly degrade.  

It is possible for bones and offal to be included in your order, but if you are purchasing less than a whole beef, please remember that you are sharing a whole animal and so the availability of the bones and offal will depend on the customers you are sharing your beef with.


Your order will be comprised of approximately the following cuts of meat.
  • 20-25% steaks
  • 20-25% roasts
  • 40-45% ground beef
  • 10-15% short ribs, stew meat, etc. 
Because nature is not uniform and animals vary in size, so do our beef cattle.  Therefore, we can't give you an exact weight for each product, only an approximation.  

Whole Carcass (whole carcass hanging weight will be approximately 550 - 625lbs.)
Price per lb. is $3.75 (based on the carcass hanging weight).  A whole beef is approximately 400-440 pounds of meat (after aging, cut and wrap) and requires approximately 16 cubic feet of freezer space.  

Half Carcass
Price per lb. is $4.00 (based on the carcass hanging weight).  A half beef is approximately 200-220 pounds of meat (after aging, cut and wrap) and requires approximately 9 cubic feet of freezer space.

Quarter Carcass
If you purchase a quarter of a beef, there is a standard way that the butcher shop will cut and wrap your meat. If you desire customization in your cut and wrap instructions, please order a half of a beef or more.  Price per lb. is $4.25 (based on the carcass hanging weight).   A quarter beef is approximately 100-110 pounds of meat (after aging, cut and wrap) and requires approximately 4 cubic feet of freezer space.
